Pecan Pie

1 1/4 C. cashews, washed
1 ¾ C. water
1 Tbsp. vanilla
¼ C. arrowroot pwd*
¾ C. pure maple syrup
1/3 C. raw pecans

Grind cashews to meal in dry blender. Add other ingredients, except pecans, and blend well. Pour ingredients into unbaked pie shell and arrange pecans over top. Bake at 350 F. for 45 to 60 minutes.

Variation: replace pecans with any kind of nut on top.

*Arrowroot—This healthful thickener used in place of cornstarch, a refined product, should not be overcooked, or it will lose its thickening property. Remove from heat as soon as recipe is thickened. Can find in most health food stores.
