Corn Waffles
1/3 C. cashews, washed1 tsp. vanilla
1/3 C. fine cornmeal
3 C. water
3 C. rolled oats
2 Tbsp. apple juice concentrate
Grind nuts in blender on high until fine.Add remaining ingredients and blend well. Let stand while waffle iron is heating. Pour batter onto iron and time for 8 to 10 minutes. Do not check before eightminutes. Allow more time, if necessary, to brown. Very good with pure maple syrup or any fruit sauce, or fresh applesauce etc.
Note: My family likes these so well that I multiply this recipe by 5 and freeze the leftovers. To reheat we just pop into the toaster or oven
