Blueberry Waffles
Into a bowl put:
4 cups quick oats (can substitute any oats; rice, barley etc.)
¼ cup corn meal (can substitute any flour)
Then add:
4 cups milk (soy, nut, rice or water)
¼ cup oil
Mix together all ingredients well
Next add:
1 tsp. salt
1 Tbsp. lemon juice
½ tsp. vanilla
2 Tbsp. lemon zest
Fold in:
1 cup fresh or frozen blueberries
1 Tbsp. honey (opt.)
Let stand at least 2 hours or in refrigerator overnight. Bake on hot waffle iron 6-7 minutes or until done.
