After Dinner Mints

2 cups Carob chips
¼ cup almonds (roasted and chopped)
1 ½ tsp. Peppermint oil (non-alcohol)
½ tsp. Roma or Pero

Melt carob chips in a double boiler. Add remaining ingredients and mix well. Drop by tablespoons

into small paper cups. Chill.
