Vegetable Salad with Cashew/Basil Dressing
Vegetable Salad
1 head lettuce---red leaf, romaine, green leaf or a mixture of all Choose from any of the following vegetables—cut into bite size pieces: carrots, celery, tomato, avocado, beets, radishes, cucumber etc.
Wash and shake dry lettuce. Break lettuce into bite size pieces. Place in a salad bowl and arrange your choice of vegetables on top of torn lettuce. Toss before serving
Cashew/Basil Dressing
1 C. cashews, washed
1 C. water
1 C. sweet onion, or 2 Tbsp. regular onion, chopped
¼ tsp. thyme
½ tsp. salt
2 tsp. basil
½ tsp. garlic pwd.
3 Tbsp. fresh lemon juice
Blend cashews in a dry blender into meal. Add next 7 ingredients and blend until creamy. May add more water if desired for a thinner dressing.
