Sweet Basil Carrots

6-12 medium carrots, peeled
2 Tbsp. pure maple syurp
1-2 tsp. fresh basil
ΒΌ tsp. salt

Cut carrots into 1/8- inch slices or run through slicer of the food processor. Place them in vegetable steamer, covered, over boiling water for 5 minutes until tender but not mushy. Remove from heat and set aside. Carrots may be steamed well in advance and combined with other ingredients immediately before serving. In large heavy saucepan, add carrots, syrup, basil, and salt. Stir well to coat carrots thoroughly with syrup. Serves 4-6.
