Paella Style Vegetables
1 ½ Wild rice cooked in vegetable broth, chicken –like broth.
1 cup brown rice cooked as above
1 cup large onion, chopped
1 large green or red pepper, chopped
1 large zucchini squash, sliced 1/4 inch thick
1 pound broccoli, chopped and steamed crisp not soft
1 cup edamame or green peas
2 large cloves garlic
1Tbsp. oregano leaves
½ tsp. anise
1 quart jar chopped tomatoes (2 lbs.)
Cook rice, set aside. (I used ½ cup wild rice, ½ long grain brown rice, ½ cup black rice, and ½ cup red rice combined with 4 cups water and 2 tsp. Herbamare.) Cook onion and bell pepper in a small amount of water until tender. Add Zucchini and oregano, anise, and garlic. Mix lightly and carefully. Add tomatoes with juice. Add cooked broccoli, edamame, and rice. Mix and heat and Serve.
