Raquel’s Vegan Spinach Pesto
Ingredients:
1 cup of packed fresh basil leaves
1 cup of packed fresh baby spinach
2–3 cloves of garlic
2/3 cup extra-virgin olive oil
1/3 cup of cashews or
1/4 cup sesame seeds & 1/4 cup sunflower seeds
1/4 cup pine nuts (optional)
Salt to taste
Directions:
In a food processor, process spinach and basil with the garlic and pine nuts. Add the oil and salt, and process until smooth. Place in a bowl. Grind the cashews or seeds to powder in blender or coffee grinder. Stir into the pesto and it is ready to use with your favorite pasta!
